Our story of re-invention starts with ourselves. Having reinvented ourselves in terms of what we do having not been chefs or restaurateurs previously and having reinvented the building we thought we would start by reinventing classics.

 The first dish of this story was bread and butter. 9 compound butters spread on an artists palette like oil paints. We invited guests to paint their palate with the different flavours. Not revealed to guests until the end of the menu but the flavours and order of the butters were actually taken from the 9 dishes that followed. We wanted them to have painted their palates with the 'colours' we were about to use.
